2000 Cabernet Sauvignon Merlot
VINTAGE
The 2000 vintage was a year in which we benefitted by having low crop levels. A warm and wet February was followed by a cool March with more rain in April . We harvested the Cabernet on 19th of April with crop levels close to 1.3 kg per vine. Low crops on healthy vines is a key to good ripening and I am sure we would have struggled in this difficult year if the crops were higher.
TASTING NOTES
Aroma: Ripe blackberry fruit, with hints of leather and earth.
Palate: Generous and supple. Concentrated, finely textured and complex.

Region: Lenswood, Adelaide Hills
Variety: 86% Cabernet 14% Merlot
Oak Maturation: 24 months in French oak barriques. All from forests in Troncais and the centre of France. 40% new oak and balance second and third use.

TA: 6.5 g/L
Cellaring: Concentration of flavour with ripe tannin and crisp acidity are the keys for ageable wines. This wine has all of these elements and I am confident that it will age well. With time it will show the trademark cedar character I believe it will be at its flavour peak 2006 to 2010 .
Food Suggestion: Ideal with red meats but can be enjoyed with a wide range of foods or on its own.
Serving Suggestion: Best drunk between 12 and 18°C
