2001 Cabernet Sauvignon Merlot
VINTAGE
The 2000/01 season was very hot in January and February but mild in autumn. We harvested the Cabernet and Merlot fuly ripe on 6th of April with crop levels extremely low at under 1 kg per vine. This season and the resultant wine confirms my belief that the flavours of the grapes are primarily influenced by temperatures post veraison (mid February in 01). Cool autumns produce finer, more subtle flavours while warm ones give wines of more overt character.
TASTING NOTES
Aroma: Ripe fragrant blackberry fruit, with hints of earth.
Palate: Generous and supple. Concentrated, finely textured and complex.

Variety: 60% Cabernet 40% Merlot
Oak Maturation: 24 months in French oak barriques. 40% new oak and balance second and third use.

TA: 7.0 g/L
Cellaring: Concentration of flavour with ripe tannin and crisp acidity are the keys for ageable wines. This wine has all of these elements and I am confident that it will age well. With time it will show the trademark cedar character I believe it will be at its flavour peak 2006 to 2010 .
Food Suggestion: Ideal with red meats but can be enjoyed with a wide range of foods or on its own.
Serving Suggestion: Best drunk between 12 and 18°C
